The problem is not "interesting" themes. The problem is inconsistency between them, and some completely fucked up themes, like /r/ooer (although a casual visitor is unlikely to stumble upon them). Inconsistency is bad, and many find Reddit to be too difficult or confusing to navigate.
And yes, I know that it's "simple" to learn if you want to, and that you've learned it easily, but many don't. Like it or not, but that is a somewhat common opinion of new visitors, and regardless what we think, they are potential ad revenue for Reddit which it misses out on if the visitors don't come back.
