I've also been trying to eat a bit more veg and I've had good success with the Beyond Meat "ground beef" crumbles. Quite a bit more expensive than tofu, but I use it in ground beef recipes (pasta, chili) and it's near-as-makes-no-difference.

Yes! Is it seitan? An ex of mine used to make a vegetarian frito pie with it and it was incredible...you'd never know you weren't eating ground beef.
