I'm excited! I made my first pasta from scratch the other day and thought, "why stop there?" So today I made the remaining pasta dough into lasagna sheets and made some lasagna completely from scratch.I tried to be a little bit traditional, so no garlic and I used the carrot/celery/onion base for the veg, and pork and beef mix for the meat. However, I am American after all, so I used Ricota. I love beschemel sauce as much as the next guy, but I just can't bring myself to use it in a lasagna.It's baking as I type. For desert, earlier today I made a nice tapioca pudding (Large pearl). I know it's typical to use two eggs, but I want a pudding, not jello.

Decided to make some noodles from scratch for the first time. I'm giving the newly minted dough some time to set (~15 minutes) before I start manhandling the poor doughball into some proper noodles.
I'm going for a simple kind of linguine, just what I can make with a knife and my own two hands. As for the sauce, just a simple garlic and basil tomato sauce. It's simmering on the stove as I speak.
It feels good to try something new. So far so good, but whatever I get wrong, I'll know for next time.

I just spent most of the last day doing something I've been putting off for quite some time, getting Thunderbird configured *just right*.
It's a thing of beauty. My calendars are all set, it archives things the way I want and in the right places, it behaves how I want. Simply marvelous. I'm in love with unified folders and saved searches as folders. Really puts a smile on my face!
Hope my exhuberance cheers someone up. The sun is shining, it's warm for a change and I have my window open for some fresh air.
