They are still in production. They might discontinue the 3600, 3800x, 3900x etc. Pretty soon, but not the 3100 and 3300x etc. As there are no this gen processors on the market.

No. They have slowed down production of some series, phased out less popular older models, and stopped producing Zen CPUs (first-gen, 14nm), but Zen+ and Zen 2 are still going strong.
The problem, right now, is that everyone is buying everything.
