I think i need to just buy it, try it and see. Filo is not crunch (raw). It becomes crunchy and stale very quickly once the package is opened so you have to work with it very quickly and cover it in melted butter or olive oil to keep it moist until it goes in the oven.

The exact thing that you need to look for is the “baklava yufkası”. It is available in almost any kind of Turkish market.
