Just to clarify - when you say to leave it untouched for 12 minutes, do you mean with the lid on and the heat off?

I've toyed with both versions of this. Bare in mind I never measure water (unless doing sushi rice). So I leave the lid on a lot of times so the water doesn't evaporate.
I try to hit the double water to rice level when I'm filling the pot but because I sieve it you can put more in than expected.
