Gemini can serve other mime types, so if you'd like to serve text/markdown you are able to do so. The gemini format for .gmi or .gemini is intentionally stripped down, but is itself quite similar to markdown. If a few people start serving content with that mime-type, you're likely to see some of these lovely clients add support to render it as well.
