Jambalaya

Unfortunately, this dish is everything but vegetarian.

Ingredients

• 2 chicken breasts, chopped
• 1 onion, diced
• 1 red pepper, thinly sliced
• 2 garlic cloves, crushed
• 75g chorizo, sliced
• A can of chopped tomatoes
• 1 Tbsp cajun seasoning
• 250g uncooked rice
• 350ml chicken stock

Instructions

• Heat up some olive oil in a pan. Cook the chopped chicken breasts until golden.
• Add the onion and cook for a few minutes until soft.
• Add the red pepper, garlic, chorizo and cajun seasoning and cook for 5 minutes.
• Add the canned tomatoes, rice and chicken stock, and simmer until the rice is tender.
