Though I have to say these days I basically just nano [filename] and type there.
I acquired the habit of writing my notes in markdown regardless of what I am planning to do with them, so anything I write now ends up being very portable with no conscious effort.
I am on the plaintext bandwagon. I don't need it in .md most of the time, and I still title things as **THIS** with sub-topics with *THIS*, even if plaintext.
Apostrophe is a great writing app. Highly recommended! :)
