Yogurt recipe
Yogurt being strained in cheesecloth and kombucha bottles can be see in the back as well
Ingredients:
- 1 cup yogurt
- 1 gallon milk (make sure it's not lactose free)
Process:
- Heat milk in a pot on medium heat. Stir frequently so that it doesn't burn. (this denatures the proteins)
- Wait for the temperature to rise until it hits 160F / 70C. Keep it there for 20 to 30 mins. Lots of waiting!
- Turn off the stove and wait for it to cool down until it's just warm to the touch.
- Add a cup of yogurt to the milk (this is where the bacteria comes from) and mix well.
- Now we keep the yogurt in a warm place overnight (8 hours). This can be an oven turned off but with the bulb on, the yogurt setting on your electronic pressure cooker, or a cooler with hot water bottles inside it.
- Now we have yogurt! Either put it in the fridge or strain it with a cheesecloth to make it thicker.
