Shortbread

Found deep in my emails (10 years back). Recipe is from a contractor I used to work with, it's his family recipe on the Scottish side.

I can vouch for how good it is!

Ingredients

1 egg, 1 lb butter, 2lbs flour, .5 lb sugar

Steps

• Get butter to room temperature (essential)
• Cream butter (by hand is the official way)
• Add egg
• Mix
• Add 1 tsp salt
• Mix with flour until very small butter/flour particles
• On an island, gather up dough, and grind with meaty part of hand into the island
• Repeat until the dough has the consistency to be rolled out
• Roll out dough at approx 1/3" thickness
• Bake at 225 for 1 hr
