Great weather during the week this week. We had a couple of days in the low 60's and one day it almost got to 70 degrees. Of course all that ended Friday afternoon and by Saturday morning the high was about 38 degrees. I need to ride, but it will either have to stay warmer on a Saturday or I'll need more coats.

I won't insult actual cooks by referring to myself as one, although nobody's died from my cooking (that I'm aware of). However, I was on a roll today. I put together a nice chili in the crockpot. I'm cooking it today and will probably have it for dinner Monday. I'm making our version of chicken nuggets. It's just cut up chicken breast dipped in butter and then panko crumbs that have been combined with parmesan cheese and chipotle pepper and onion salt and some other miscellaneous seasonings. As a side dish I'm making sweet potato fries. They don't get crispy like potato fries but I'm ok with that. They are a much healthier version baked instead of deep fried.

After tonight's dinner was done I made a couple of zucchini bread loaves that turned out really well. I don't even add butter or any other type of spread because they are very moist. They don't taste like zucchini at all and the slight crunch from the walnuts gives it some real texture. I can easily eat a whole loaf if nobody's watching.

In between doing a few house chores, cooking and playing a computer game or two I've been converting to documents to PDF format in hopes of creating a PDF book or maybe an eBook that will serve as a sort of snapshot in time. It's a compilation of all of the reference items I store on my computer as well as a private journal, many recipes and some other miscellaneous items. It's just sort of an experiment more or less at the moment playing with Pandoc and find out what I can do with it. It's a precursor to converting the recipes I currently have that are in a simple txt format into a book of sorts, albeit electronic only.

Tommorrow it's supposed to get up into the low 40's. Maybe I'll crank the bike up and ride around town - just to get the fluids warm and keep the battery charged.
