200 grams of butter
200 grams of sugar
200 grams of self raising flour
4 large eggs
200 grams of dried fruit of choice (apricots, raisins, dades, figs, cherries
etc.)
100 ml of your favorite liqueur
pinch of salt
1 tsp of cinnamon
a hint of ground cloves
1/4 of a tsp of cardamom if you grind it yourself from cardamom pods, otherwise
a bit more
Preheat the oven at 175 C / 350 F . Cut the dried fruit in little pieces and
soak it in the liqueur for at least 30 minutes. Mix the butter and sugar well
and add the eggs one by one. Mix in the other ingredients and put the mixture
in a greased cake or bundt pan or mini bundt pans. And now for the slightly
harder part: this cake takes a while to bake, so have some patience. If you
make the big cake with all of the ingredients from the recipe it takes at least
an hour to 70 minutes, depending on your oven. For a cake with half the
ingredients (perfect for sharing with a few friends) it takes about 45 minutes.
