Black bean freezer breakfast burritoes
Ingredients
- 1 package extra-firm tofu, drained
- 1 medium onion or ⅓ large onion, diced
- 2–3 cloves garlic, minced or grated
- 1 can diced potato
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- ¼ cup nutritional yeast
- 2 teaspoons chili powder
- 1½ teaspoon ground cumin
- 1 teaspoon salt
- ¾ teaspoon ground turmeric
- ½ teaspoon black pepper
- 1 small bunch fresh spinach, stems removed and chopped
- Several tortillas
Instructions
- Cook onion for 5-7 minutes. Add garlic and cook for 2 more minutes.
- Add potato and crumbled tofu. Stir in chili powder, cumin, black pepper, salt, turmeric, and nutritional yeast. Cook for 5 minutes.
- Add black beans and tomatoes. Cook for 5 minutes.
- Add spinach and cook until wilted.
- Let cool.
- Scoop filling into tortillas. Roll into burritoes. Wrap and freeze, or refrigerate (for up to a week).
