2021-10-11 - Mushroom Gyozas
My wife and I made gyozas for the first time, stuffed with a mushroom and spinach preparation.
If you are not familiar with those, they are Japanese dumplings with a thin wrapper and recognizable shape. The most common ones use a pork based preparation, but we had fresh oyster mushrooms (pleurotes in French) that needed to be cooked somehow.
While it still took a while, folding them was actually way easier than what we expected and turned out pretty well! We served it with fried rice, and soy sauce to dump them in, and bon appétit!
Note: I'm not going to post the full recipe because we didn't make the wrapper dough ourself, and you can fill them with whatever you want.

- Take one round wrapper
- Put a spoon of stuffing in the middle
- Have a bowl of cold water around, dip you finger in it, and humidify the border
- Fold it in half and hold the middle with one hand
- With the other hand, make a few folds on one side around the middle. Just make sure that it is properly closed in the end
- Once you're done, heat oil in a pan
- Add goyzas in a circle for like 2 minutes
- Mix a spoon of flour with a glass of water (the flour will add a crypsy feeling on the bottom)
- Dump the water in the pan, then cover to steam your dumplings for ~8 minutes
- Reverse your pan on a plate, and you're ready to eat!
