* Exported from MasterCook * Sopes Recipe By : Ortega Cookbook Serving Size : 16 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup shortening or lard 2 cups masa harina 1 1/4 cups warm water 1 4 oz. can diced green chiles 3 tablespoons vegetable oil -- divided 1 16 oz. can refried beans -- warmed 1 cup shredded cheddar cheese OR Cotija cheese, crumbled mild thick & chunky salsa sour cream Cut shortening into flour in large bowl with pastry blender or two knives until mixture resembles coarse crumbs. Gradually add water, kneading until smooth. Add chiles; mix well. Divide dough into 16 small balls. Pat each ball into 3 inch patty; place on waxed paper. Heat 1 teaspoon oil in large skillet over medium-high heat for 1 minute. Cook patties for 3 minutes on each side or until golden brown, adding additional oil as needed.
