* Exported from MasterCook * Mexican Pork Roast (Cooked In Beer With Green Sauce) Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Mexican Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Medium onions -- chopped 2 carrots -- peeled and sliced 1 loin or shoulder pork roast -- (4 to 5 lb.) 2 Tsp. salt 1/2 Tsp. oregano 1/2 Tsp. ground coriander 1/2 C. beer -- (1/2 to 3/4) Green Sauce: 2 Tbsp. olive oil 1 Medium onion -- chopped 1 Clove garlic -- peeled and chopped 1 Can Mexican green tomatoes (tomatillos) -- (10 oz.) 1/2 Tsp. crumbled dried oregano 1/2 Tsp. dried cilantro 2 Tbsp. wine vinegar salt and pepper to taste Place onions and carrots in roasting pan. Rub pork with salt, oregano and coriander. Place pork on top of vegetables. Add beer; cover. Roast at 350 degrees for 2 3/4 hours. Add more beer, if necessary. Slice and serve pork with hot dip or green sauce, rice and refried beans. Note: This may be cooked in a slow cooker on a low setting with 2 cups beer for 8 to 12 hours. Green Sauce: Heat oil in small skillet. Saute onion and garlic until limp. Drain tomatillos; reserve liquid. In electric blender, combine tomatoes, 1/2 cup reserved liquid, onion, garlic, olive oil, oregano and cilantro; puree. Heat skillet once again over moderate heat. Pour in sauce; cook for 10 minutes. Remove from heat; add wine vine- gar, salt and pepper. Chill sauce and serve with meat dishes. Makes 6 to 8 servings. - - - - - - - - - - - - - - - - - -
