* Exported from MasterCook * Carmelized Carnitas (Pork) Recipe By : New Mexico Cooking, by Clyde Casey Serving Size : 10 Preparation Time :0:00 Categories : Mexican Cookbook Pork Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds boneless pork shoulder 2 tablespoons brown sugar -- packed 1 tablespoon tequilla 1 tablespoon molasses 1/2 teaspoon salt 1/4 teaspoon black pepper 2 cloves garlic -- finely chopped 1/3 cup water 1 green onion with top -- sliced 1. Cut pork into 1-inch cubes. Place cubes in single layer in a 1-inch skillet. 2. Top with remaining ingrredients, except for green onion. 3. Bring to a boil, then reduce heat. 4. Simmer uncovered, stirring occasionally until water has evaporated and the pork is slightly carmialized, about 35 minutes. 5. Sprinkle with green onion and serve with wooden picks.
