* Exported from MasterCook * PAD THAI by Mike Recipe By : chefmad@macconnect.com Serving Size : 4 Preparation Time :0:00 Categories : Pasta Thai Asian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound dried rice noodles 16 jumbo shrimp, peeled & deveined peanut oil 2 eggs, beaten 1/2 onion, finely chopped 2 tablespoons sugar 3 tablespoons vinegar 2 tablespoons soy sauce 1 tablespoon fish sauce paprika 1/2 cup chicken stock rice noodles 1/2 cupground peanuts green onions cut into 1" pieces bean sprouts salt pepper 1. Soak noodles in cold water for 30 minutes, drain. 2. Heat pan, add oil & sear shrimp on all sides; hold on plate. 3. Heat pan, add oil & scramble eggs until cooked through, hold with shrimp o n plate. 4. Heat oil, saute onion until tender. Add sugar, vinegar, soy sauce, fish sau ce, paprika & stock; reduce slightly. 5. Add noodles and cook until liquid is absorbed. 6. Add shrimp, egg & peanuts. Heat through. 7.
