150g basil leaves
1.5 cups finely grated peccorino
50g pine nuts
2 handfuls salt
1.5 cups oil
Place all dry ingredients on a board and chop with a sharp knife until you can form a solid cake.
Add cake to a mixing bowl and add oil, stir, taste, add more salt if necessary.
