Flax eggs make a good egg substitute for most things, especially muffins, cookies, etc., but they aren't an *exact* substitute. They aren't as sticky or short as real eggs, and they are rather fibrous. This is not a bad thing, but it does, however, make them a less than ideal substitute for eggs in, say, meringue, custard, etc.
