Vegan "Goat's Cheese"

Takes about an hour to prepare and makes one 'log'.

Ingredients

1.5 cups (200 g) raw cashews,

3 tablespoons lemon juice + 1 teaspoon, divided

3 tablespoons melted coconut oil

2 cloves of garlic

1 teaspoon salt

1 cup (200 ml) full-fat coconut milk

1/2 tbsp red wine vinegar

1/2 cup water

1 tbsp agar agar

2 probiotic capsules (optional)

Special gear

A cheese mold; a tall cylindrical glass works well for this.
