After a lot of distro hopping I have settled with Debian 12 bookworm with the GNOME desktop environment.
Since my journey began I have tried Mint, Ubuntu, Alpine and Debian distros, and KDE Plasma, Xfce and GNOME desktop environments.
So far in Debian I have got all the software I need up and running. I had to do a couple of installs from binaries, rather than from the apt package manager, but that was all straight forward.
I like GNOME simply because everything seems to be where I naturally try and find things. I don't actually see the desktop very often, as I load my terminal on startup, mapped my browser to ALT-W, and generally just switch between terminal and browser using ALT-TAB, but all the settings were where I expected or easy to find.
One annoying thing is the grouped windows of apps of the same kind when I ALT-TAB. I'm sure I can disable it somehow, just need to find out how.
I have Ubuntu installed on my older laptop, so I can keep experimenting with other distros.
At this stage I would consider myself somewhere between beginner-intermediate Linux user, only picking it up for the first time around April/May. I have got myself to a level of comfort that I was happy to remove Windows completely. That was a liberating experience.
So in summary Debian + GNOME is my current sweet spot. I'll keep working at the edges though, and do the occasional distro hop to keep my fingers on the pulse.
