Chicken Tortilla Soup

Prep: 10 mins

Cook: 4hr

Hardware: Crock Pot, Pan

Ingredients

• 1 lb chicken breast
• 1 cup corn
• 1 onion
• 1 can fire roasted tomatoes
• 0.25 cups cilantro
• 3 cloves garlic
• 1 tbs cumin
• 1 tbs chili powder
• 2 cups chicken broth
• 1 can pinto or white beans
• 1 cup cheese (garnish)

Steps

1. Slice chicken breasts into very thin strips

2. Cook chicken in pan before browned (just enough to pull it apart with fork)

3. Add ingredients to crock pot

4. Cook on low heat for 4 hours, periodically stiring
