Stollen

Ingredients

       480g self-raising flour
       150g sugar
       120g currants
       240g raisins or sultanas
       150g ground almonds
            zest of 1 lemon
      ½ tsp ground cardamom
      ½ tsp ground cinnamon
      ½ tsp ground nutmeg
      ½ tsp almond essence
      ½ tsp vanilla essence
          2 eggs
       120g butter
        45g shredded suet
about 150ml Greek yoghurt
       300g marzipan

For topping
60g flaked almonds
    melted butter
    icing sugar  

Method

1. Preheat the oven to 180C.

2. Rub fats into flour. Add dry ingredients and mix well.

3. Beat eggs, add essence and yoghurt to make about 225ml. Add this to the dry ingredients, mix and knead into a dough.

4. Roll out, shape into a thick oval.

5. Roll marzipan into a sausage and put in centre of dough.

6. Fold dough over marzipan and place on a greased baking tray, join down.

7. Bake for about 1 hour.

8. When cooked, brush immediately with melted butter and dredge with icing sugar and flaked almonds.
