Patata alla birra

Ingredients

  750g potatoes thinly sliced
 200ml lager
2 tbsp extra virgin olive oil
     1 onion thinly sliced
  150g bacon
   85g parmesan
       salt and pepper

Pecorino cheese also works well with this. The bacon is best if it's not too fatty. Don't add too much salt as the bacon provide a lot of this.

Method

1. Preheat the oven to 180C.

2. Toss the potatoes with the beer, olive oil, salt and pepper.

3. Line an ovenproof dish with alternate layers of potato, onions, bacon and cheese. (Finishing with a cheese layer.)

4. Pour the remaining beer in, cover with foil and bake for 1 hour.

5. Remove the foil and bake for another 30 minutes.

6. Leave to rest for a couple of minutes before serving.

Serves four.
