200g butter 100g soft, dark brown sugar 225g golden syrup 150g medium oatmeal 200g plain flour 4tsp baking powder 4tsp ground ginger 1tsp nutmeg 1tsp mixed spice 2 large eggs, beaten 50ml milk
1. Heat the oven to 140C.
2. Grease an 20cmx20cm cake tin.
3. In a heavy-based saucepan melt together the butter, sugar, treacle and golden syrup over a gentle heat. Do not allow the mixture to boil.
4. In a bowl stir together all the dry ingredients. Gradually add the melted butter mixture stirring to coat all the dry ingredients and mix thoroughly.
5. Gradually beat in the eggs. Add the milk and stir well.
6. Pour the mixture into the prepared tin and cook for 1½ hours until firm and set. It should be a dark golden brown.
7. Remove the from the oven and leave to cool in the tin. Once cool store it in an airtight tin for 3-7 days before eating, to let the flavours develop. It will keep up to two weeks in an airtight container.
