Flapjack

Ingredients

250g butter, plus extra to grease
225g demerara sugar
110g golden syrup
225g jumbo rolled oats
225g rolled oats 

Using a mixture of sizes of oats gives a better texture than using just one type.

Method

1. Preheat the oven to 160C

2. Grease two 20cm baking tins

3. Melt the butter in a small pan with the sugar and syrup. Stir well to combine

4. Take off the heat and stir in the oats.

5. Press evenly into the tins and bake for 20-25 minutes, until set and golden.

6. Cut into pieces a few minutes after they come out of the oven, before they harden. Then allow to cool completely in the tin.
