100g butter 100g sugar 50g honey 100g self-raising flour 100g rye flour 1tsp baking powder 50g All Bran soaked in enough milk to soften it ½tsp cinnamon ½tsp ginger 2 eggs 3 very ripe bananas
1. Preheat the oven to 180C.
2. Mash the bananas.
3. Cream the butter, sugar and honey together then mix in the eggs.
4. Add the bananas and the All Bran to the mixture
5. Mix together the flour and the spices and fold into the mixture.
6. Put into a lined, greased 1kg loaf tin.
7. Bake for about 50 minutes. Check with a skewer to see if it's cooked. If it still uncooked in the middle then lower the temperature to 150C and cook until a skewer comes out clean.
8. Allow to cool in the tin for about 5 minutes before turning out onto a rack to cool completely.
