Spaghetti carbonara

Bolognese's white cousin.

Ingredients

• 400g spaghetti
• 200g bacon, diced
• 3 eggs
• 100g grated parmesan cheese
• olive oil or butter
• salt and pepper

Instructions

• Bring a pot of water to the boil and cook the spaghetti.
• Meanwhile, whisk the eggs in a mixing bowl and stir in the cheese.
• Heat some olive oil or butter in a pan and cook the bacon slowly until crispy. Then, remove the bacon from the pan (without the fat) and set aside.
• Drain the spaghetti and mix in the bacon.
• Mix in the egg-and-cheese mixture. At this point, the spaghetti should still be warm, and the heat from the spaghetti will cook the egg. Be sure to mix well.
• Mix in some pepper.
• Let the pasta sit in a pan with the lid on for a couple minutes.
