Chilli Con Carne

Perfect weekday goop.

Ingredients

• 1 large onion, diced
• 1 red pepper, sliced
• 2 garlic cloves, crushed or finely chopped
• 1 tsp hot chilli powder (or 1 tbsp mild chilli powder)
• 1 tsp paprika
• 1 tsp cumin
• 410g can kidney beans
• A can of chopped tomatoes
• 500g minced beef
• 2 tbsp tomato purée
• 1 tsp sugar
• 1 tsp marjoram
• 300ml beef stock

Instructions

• heat some olive oil in a pan. Brown the minced beef in the pan.
• Add the onion and cook until soft.
• Stir in the garlic, red pepper, chilli powder, paprika and cumin, cook for a few minutes.
• Add the beef stock, the canned tomatoes, marjoram, sugar, tomato purée and add some salt and pepper. Stir well.
• Bring the sauce to a boil and let simmer for 20 minutes.
• Add the kidney beans and let them warm through.

Serve with longgrain rice (and some yoghurt, trust me)
