Fettuccini Alfredo (45 minutes)

Ingredients:
- 2 Chicken Breasts
- 1 Tbsp Olive Oil
- 2 Tbsp Butter or Margarine
- 2 Tbsp Flour
- 1/4 Tsp Garlic Powder
- 1/4 Tsp Pepper
- 1/2 Tsp Salt
- 500mL 6% Cream
- 1 Cup Mozzarella Cheese
- 1/2 Cup Parmesan Cheese
- 1 Box (375g) Fettuccini Noodles
Preparation:
Directions:
- Cut the chicken into small pieces and add to a pan.
- Heat the chicken with medium heat until chicken is cooked.(10 minutes)
- In a medium pot, add olive oil, butter, flour, and spices. Turn the pot onto medium-low heat and whisk frequently until the butter is melted and a homogeneous roux is formed.
- Add cream to pot and whisk. Turn heat up to medium. Whisk frequently to prevent the roux/cream from sticking to the bottom of the pot and burning. Continue until the mixture is boiling. (15-25 minutes)
- Meanwhile, cook fettuccini noodles to package directions.
- Once the sauce is boiling, remove from heat and add cheeses. Whisk until homogeneous. If sauce is not warm enough to melt the cheese, use medium-low heat to assist in the melting process. (5-10 minutes)
- Add the chicken and sauce to the pasta a stir. Enjoy!
