I could highly recommend PBS’s 2017 documentary, The Vietnam War directed by Ken Burns and Lynn Novick.
The 18 hour, 10 part film included frank interviews from both side and provides discussion for all the major campaigns in the war. The film covered the time span from the Viet Minh/French war era all the way to some time after 1975.
The film is quite triggery if you are sensitive or combat vet. I could feel their PTSD over flowing in some of the interviews. Viewer discretion is advised.

Seconded, also another Ken Burns doc in the same vein titled The West, which documents the history of the american west from basically as far back as is possible up through the present day. It especially explores the story from the viewpoint of Native Americans more than is usually done.
