- 300ml cottage cheese
- 1 egg yolk
- 3 tbsp plain flour
- 1 tbsp sugar
- Pinch of salt
1. Dump cottage cheese into a sieve to drain off excess liquid
2. Mix cheese, yolk, salt, sugar and flour very well (especially if your cottage cheese is the kind that has those sort of pellets in it)
3. Heat oil in frying pan
4. Dollop into frying pan
5. Flatten dollops into pancakes
6. Fry, turning once, until golden brown
7. Serve and top; we like jam and sour cream
- Easy and delicious; this has become one of our regular weekend breakfasts
- Easily doubled
- The Russia Beyond recipe included so little flour that the first attempt was just a mess
- You can skip the fridge-setting step from the original recipe if you're making it straight from the fridge
- Don't fry them too hot or too fast or they'll just burn
