Original recipe

Ingredients

- 2 beetroot

- 2 carrots

- 2 medium potatoes

- 2 shallots

- 3 garlic cloves

- Half a cabbage

- Tomato purée

- Fresh parsley

- Fresh dill

- Fresh coriander

- Sugar

- Salt

- Pepper

- 3 bay leaves

- 2 tbsp lemon juice

- Vegetable stock pot

- Sour cream

Method

1. Chop shallots and garlic finely

2. Fry shallots and garlic in oil for ~5 mins

3. Grate carrots

4. Add carrots to frying pan

5. Fry for another ~5 mins until soft

6. Slice cabbage finely

7. Add to frying pan

8. Fry for another ~5 mins

9. Cut up and grate beetroot

10. Peel potatoes

11. Cut potatoes into cubes

12. Add a small squirt of tomato purée

13. Mix well

14. Add bay leaves

15. Add sugar, salt, pepper to taste

16. Add beetroot

17. Fill pan with vegetable stock and cover with lid

18. Slow cook for 40 mins

19. 20 mins before serving, add fresh herbs and potatoes and lemon juice

20. Cook for another ~25 mins

21. Serve and garnish with sour cream and fresh dill
