Jambalaya
Unfortunately, this dish is everything but vegetarian.
Ingredients
- 2 chicken breasts, chopped
- 1 onion, diced
- 1 red pepper, thinly sliced
- 2 garlic cloves, crushed
- 75g chorizo, sliced
- A can of chopped tomatoes
- 1 Tbsp cajun seasoning
- 250g uncooked rice
- 350ml chicken stock
Instructions
- Heat up some olive oil in a pan. Cook the chopped chicken breasts until golden.
- Add the onion and cook for a few minutes until soft.
- Add the red pepper, garlic, chorizo and cajun seasoning and cook for 5 minutes.
- Add the canned tomatoes, rice and chicken stock, and simmer until the rice is tender.
