Chilli Con Carne
Perfect weekday goop.
Ingredients
- 1 large onion, diced
- 1 red pepper, sliced
- 2 garlic cloves, crushed or finely chopped
- 1 tsp hot chilli powder (or 1 tbsp mild chilli powder)
- 1 tsp paprika
- 1 tsp cumin
- 410g can kidney beans
- A can of chopped tomatoes
- 500g minced beef
- 2 tbsp tomato purée
- 1 tsp sugar
- 1 tsp marjoram
- 300ml beef stock
Instructions
- heat some olive oil in a pan. Brown the minced beef in the pan.
- Add the onion and cook until soft.
- Stir in the garlic, red pepper, chilli powder, paprika and cumin, cook for a few minutes.
- Add the beef stock, the canned tomatoes, marjoram, sugar, tomato purée and add some salt and pepper. Stir well.
- Bring the sauce to a boil and let simmer for 20 minutes.
- Add the kidney beans and let them warm through.
Serve with longgrain rice (and some yoghurt, trust me)
