Cooking and eating has been difficult these past few years, and I've been having trouble keeping on enough weight to be healthy.
I've been replacing too many meals with basic foods like eggs on toast or ramen or Soylent. Even when I do cook a proper meal, it's usually one of the same few recipes, optimized to be easy to prepare with ingredients I can get within walking distance of my apartment.
A few weeks ago I got really sick and didn't eat solid food for a week. It made me realize how much I take food for granted, and so I decided that once I was better I was going to turn things around, start cooking more, start eating healthier, and start putting some weight back on.
I made a plan: I'm going to eat more small, frequent meals over the course of the day, I'm going to keep the house stocked with healthy snacks, and I'm going to start learning new recipes.
So far, it's been working! I learned how to use my pressure cooker that's been collecting dust and made mushroom risotto. I got some frozen veggie bao and gyoza and learned how to steam them. I got baby carrots and tzatziki and hummus to snack on.
I definitely want to keep up the momentum. My next goal is to start cooking more with veggies; I actually really love veggies, and it's a shame I don't have more of them in my diet.
I also want to cook more vegan food, and find ways to make the foods I love vegan. I tend to cook with a lot of cheese, and I would like to have more recipes in my repertoire for my vegan and non-dairy friends. I'm also hoping cooking vegan will encourage me to learn to work with new ingredients and be a little more creative in the kitchen.
Getting to the grocery store can be difficult, so I'm going to start planning my meals better so I can get more food in fewer trips. That way I'm not limiting myself to whatever I can find within walking distance.
To help with the weight, I'm also going to treat myself to my favorite veggie restaurants every now and then.
I'm hoping this is one of those things where the more I do it, the easier it becomes. I already discovered that once I cut soda and sweets, I eventually lost my taste for them. I'm expecting that once I get into the rhythm of cooking more healthy food, I'll be less likely to fall back on bad habits.
I'm sharing my plan with my friends (and now internet strangers) to help hold myself accountable.
Maybe I'll update y'all with my progress.
