@satch I'm married to the county museum curator. We all agree the naming story is cute but mostly a fable. It's another of the many rust belt cities that saw the heyday in the Victorian era. We're also famous as the site of a notorious Civil war Prision Camp, but many other interesting things.

@stack small bubbles starting to form. The entire mess in the jar sort of lava lamps through the day and some elements settle out while others remaine floating. Seems like progress.

So, the carbonation didn't happen as planned. I think I might have used the wrong vessle to carbonate in and had too much head space. It ran right though the sugars in the juice drink and left it more of a lemonaid like flavor so I'll have to try again!

Yes, you need to seal the stuff in an almost full bottle or growler, in a safe area that can tolerate an explosion. I used a deep restaurant-style busing tray. Never had an accident but better safe than sorry. When fully carbonated, shove it into the fridge. Ambient temperature makes a big difference

@stack pleanty of experience with kvass here. I used a Colman growler this time rather than the old 2l bottles. It's a nice beverage but I'm going to keep playing with it.

Anyone else trying out making a gingerbug to make carbonated drinks at home? I'm used to making kvas here but not my own starter for the fermentation process. Just started a bug today and hope I get somewhere. I had a lot of fun working with yogurt once opon a time. When Dannon said they were going to patent their yogurt I was like, hoist up the jolly rodger we be taking some of that in the name of the king....
