Buckwheat can be purchased fresh, but then you need to grind it yourself, and risk stepping on the black caltrops that will get on the kitchen floor. Making your own noodles can also be fun.
This ideally needs a pan wide enough to fit the noodles. Or go full Procrustes and break the noodles up into a smaller pot.
Add noodles to pan, cover with mushroom stock until just submerged. Add water if there is not enough stock. Bring stock to boil (to 180F probably suffices), stirring the noodles. With too little water or too much heat the noodles will glue themselves to the pan. Another option would be to first soak the noodles for a while.
The garlic may need to marinade in the vinegar for a bit to take the edge off of it, especially if the boiling hot starch water has been rinsed off.
Rinse off the noodles with very cold water, drain, season with rice wine vinegar and maybe some sesame seeds.
Add some sauerkraut and fresh grated (or minced) ginger to the noodles and starch.
