A favorite in my family, we've got a pretty interesting way of making it I think.
Ingredients
White Rice (~3c)
Bell Pepper (1-2 lg)
Tomato Juice or Vegtable Juice (1-1.5 lg can/bottle)
Ground Beef (~1-1.5lb)
Bacon (~1lb) [can omit, as of late I've been doing so]
Onion (1lg)
Directions
1. Begin preparing rice. I'm a fan of Alton Brown's method.
You can watch it here (youtube)
2. Cut onion and bell pepper into smallish cubes, and the bacon into squares.
3. Plonk beef, bell pepper, onion and bacon into a pan, cook over medium-low heat, stirring occasionally. If the timing's right, this'll be done about the same time as the rice.
4. Mix rice, beef mix and juice. Typically I'll do this in the rice pot.
5. Enjoy! For seasoning I'm a fan of plain salt on this one, depending on the fat content of the beef.
