Why is umami so hard to describe? I have yet to understand exactly what it is, and it sounds like a bit of bullshit. Savory? I mean, come on. Bitter, salty, sour, sweet -- all of these make clear sense to me. Well, bitter and sour perhaps have an overlap; if you don't believe me try Indian bitter gourd pickles. Salty and sweet are obvious. Is umami, like everything else? Yikes. Humans.
