Makes a deep 9" (23cm) cobbler. (200° C)
(1 can (470g net)) peaches
(1 tablespoon [15ml]) potato flour
(2 or 3 milliliters) cinnamon, ground (optional)
(1 milliliter) nutmeg, ground (optional)
(2 tablespoons [30ml]) sugar
(200 grams) flour
(10 grams) sugar
(8 grams) baking powder
(1 millilter) salt
(25 grams) butter
(2 deciliters) milk
Mix sugar, potato flour, and spices. Dice the peaches. Dust thoroughly with sugar, potato flour, and spices. Let sit 15 minutes while working on the topping.
Mix the dry ingredients. Cut the butter into the dry ingredients. Lightly mix in the milk.
Pour filling into deep dish. Cover with dough. Bake at 200° C for 25 to 30 minutes. Cool at least 20 minutes to allow to set.
This works for fresh peaches, too. Add a few drops of lemon juice to the fresh fruit.
