Yikes! That is a lot of sugar! I use no sugar but fan the rice in a bowl while scraping off layers with a paddle and adding rice vinegar... nothing added while cooking, and no sesame oil either. I want to taste the fish! Not a fan of 'American sushi' drowned in sauces and torched to death...

@stack I'll have to give that a shot! Straight sashimi isn't off the table by any means, this sort of thing is definitely indulgent.
Most of the time I make handrolls - the ice-cream-cone-like ones. Even fish is optional - sliced avocado, strips of cucumber, some neon-colored pickles from a japanese store, pickled plum, yamagobo (pickled burdock root sliced thin), etc.
