Pommes Noisettes

Ideal to serve with steak ... or any other meat !

Ingredients - for 2, yields about 30 round potatoes

350g potatoes

4 Tbsp cornstarch

½ clove garlic

1 shallot

1 egg

breadcrumbs (prefer Panko if you can find)

salt and pepper

Instructions

Peel the potatoes and put them in a large pot of salty water

Cook for around 30-40 mins until a knife can easily go in

Drain the potatoes and mash them, let them cool down

In the meantime, mince the garlic and shallots

Combine them with the egg, cornstarch salt and pepper and mix well.

The potatoe paste should be a bit sticky

In a plate, pour some of the breadcrumbs

Take a spoonful of the potatoe paste and drop in the breadcrumbs

Using the breadcrumbs, make a ball of the potatoe paste

Drop the ball on a baking plate covered with baking sheet

Repeat until there is no more potatoe paste

In a large pot, heat frying oil until 180℃

Drop 6 to 8 potatoe ball and cook until golden, it's quite fast

Drop the cooked balls on a plate with absorbing paper, to suck up the fat

Continue until all potatoe balls are cooked.
