Spaghetti carbonara
Bolognese's white cousin.
Ingredients
- 400g spaghetti
- 200g bacon, diced
- 3 eggs
- 100g grated parmesan cheese
- olive oil or butter
- salt and pepper
Instructions
- Bring a pot of water to the boil and cook the spaghetti.
- Meanwhile, whisk the eggs in a mixing bowl and stir in the cheese.
- Heat some olive oil or butter in a pan and cook the bacon slowly until crispy. Then, remove the bacon from the pan (without the fat) and set aside.
- Drain the spaghetti and mix in the bacon.
- Mix in the egg-and-cheese mixture. At this point, the spaghetti should still be warm, and the heat from the spaghetti will cook the egg. Be sure to mix well.
- Mix in some pepper.
- Let the pasta sit in a pan with the lid on for a couple minutes.
