Cafecito
I've been trying and failing to make cafecito for a while, and I finally got the crema right.
- 1.5 tsp sugar in a little coffee glass (espresso cup, etc)
- brew coffee in your moka pot according to your tastes
- after the first few drops appear, take it off, pour a couple drops on your sugar (not too much!)
- put the coffee back on the hob until it finishes
- whip up the sugar and the drops of coffee until it's a light beige colour and the sugar is thoroughly dissolved - a min or two, you can't overwhip it
- slowly pour the rest of the coffee in your cup; the crema will sit on top
My problem before was adding too much coffee to the sugar. Just a few drops!
