Fermented Garlic Honey
Quantity: 1 cup
Ingredients
- 2 bulbs garlic
- 1 cup honey
Instructions
- Remove skins from all garlic cloves and place all garlic cloves in a glass jar at least 12 oz in size (for instance, a 12 oz con queso dip jar that has been cleaned out)
- Pour honey into jar
- Screw lid tightly onto jar
- Keep jar in a cool place away from sunlight, as you would for other fermentations
- Every day for the first 2 weeks, loosen the lid enough for the built-up CO2 gas to escape the jar, then tighten the lid back up again quickly (this process should take about 1 second)
- Every day for the first 2 weeks, flip the jar upside-down for a 10-20 seconds, then turn the jar rightside-up (this process makes sure all of the garlic gets coated in honey to prevent mold growth before the fermentation process gets the garlic honey acidic enough to prevent mold and bad bacterial growth)
- Once the garlic and honey have been fermenting for about 4 weeks, it will be ready to consume
- Store the finished fermented garlic honey in the jar at room temperature (the fridge can cause the honey to crystalize)
