Knedla (steamed dumpling for goulash)

Ingredients
- 500g AP flour
- 0.25L milk
- 1 egg
- 1 packet yeast
- 1tsp sugar
- "a few" tsp salt
- old French bread [optional]
Steps
- Heat small amount of milk for 10 seconds in microwave to lukewarm. Add 1tsp sugar and yeast. Whisk and let sit 10 minutes to activate yeast.
- Combine flour, egg, few dashes of salt, yeast mixture, and rest of milk (room temp). Stir together, knead for 10 minmutes. Dough should be smooth and non-sticky. Add flour to decrease stickiness.
- [Optional] Break a piece or two of old break into small cubes and mix into dough.
- Cover with cloth and let sit for 2 hours to rise.
- Dust wooden board with flour and form into two loaves. (Loaves will double in size while cooking.)
- Cover with cloth and let sit for another 20 minutes.
- Steam the loaves for 18 minutes. (Ideally in a strainer basket pasta pot if you have one; floating in boiling water if you don't.)
- Poke with fork to let out steam; slice with cooking twine.
