Shortbread
Found deep in my emails (10 years back). Recipe is from a contractor I used to work with, it's his family recipe on the Scottish side.
I can vouch for how good it is!
Ingredients
1 egg, 1 lb butter, 2lbs flour, .5 lb sugar
Steps
- Get butter to room temperature (essential)
- Cream butter (by hand is the official way)
- Add egg
- Mix
- Add 1 tsp salt
- Mix with flour until very small butter/flour particles
- On an island, gather up dough, and grind with meaty part of hand into the island
- Repeat until the dough has the consistency to be rolled out
- Roll out dough at approx 1/3" thickness
- Bake at 225 for 1 hr
